One half continues its maturation in bourbon barrels, the other half is transferred to 30 year old Matusalem Oloroso sherry casks.

Launched in late 2008 to replace the previous 12 year old, this single malt from the Dalmore distillery is a toasty, coffee-rich dram with beautifully spice notes and a thick mouthfeel. This is probably the market the Dalmore are hoping to win over, smooth luxurious whiskies for drinking after dinner - possibly with a cigar - rather than rugged drams more suited to drinking open air by beach campfire. The spirit is initially matured in American white oak ex-Bourbon casks, yielding soft vanilla and honey notes. He favours fusing together the sweet, vanilla rich whiskies from ex-bourbon barrels with the aromatic, spicy and dried fruits characters from sherry casks from Spain. Tasting Notes: Matured in American white oak bourbon casks and then aged in Oloroso casks this whiskey exudes flavour and complexity well beyond its 12 years.
